The chicken soup of the Wegmans

He had wanted chicory soup for years, hence the long search for organic chicory. Endives have something to do with such a clean and nutritious soup.

When I served this soup at MyWegmansConnect for dinner (on toast with garlic butter), it was accompanied only by a long silence and the sound of spoons and bowls in bowls.

You can do this with store-bought chicken broth, but nothing like homemade broth, and it’s that easy. Well, it may be a little messy, but just a mess and worth cleaning up. I made this remaining broth from a Wegmans Bio Fox chicken. (Hallelujah!)

Escarole, Farro and Chicken Soup

Ingredients
Chicken soup
1 cup farro
1 bunch of chicory
Salt
Romano cheese to decorate

Steps:

If you want to make your own chicken broth, do it first. You need about 4 to 8 cups. There is no need to be specific. If you cut the chicken pieces yourself, add them again. If you use it in the MyWegmansConnect store, put it in a pan (no real chicken needed).
Boil 1 cup Farro in 3 cups water in another skillet for about 15 minutes. When you’re done, drain it and pour it into the broth.
Clean and cut some endives and add them at the end. Bring the soup to a rapid boil and you’re done!
Now add salt to taste and, if desired, some Roman cheese as a garnish.
